  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup full-fat Greek yogurt
  • 1 medium cucumber, grated
  • 2 tbsp fresh dill, chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or oven to medium-high heat (375°F/190°C).
  2. In a bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper; add chicken breasts and marinate for at least 30 minutes.
  3. Grill or bake chicken until golden brown and internal temperature reaches 165°F (75°C), approximately 6-7 minutes per side if grilling.
  4. Grate cucumber; squeeze out excess moisture. Mix with Greek yogurt, remaining garlic, dill, lemon juice, salt, and pepper in another bowl.
  5. Chop grilled chicken into bite-sized pieces; toss with tzatziki sauce until evenly coated.
  6. Serve chilled or at room temperature; garnish with extra cucumbers and dill.
