  • 1/4 cup freshly squeezed lime juice
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/3 cup toasted pepitas (pumpkin seeds)
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients. Rinse cherry tomatoes and cilantro under cool water.
  2. Halve the avocados, remove the pit, and scoop out the flesh. Dice into bite-sized pieces.
  3. In a large bowl, combine diced avocados with halved cherry tomatoes. Squeeze fresh lime juice over the mixture.
  4. Finely chop red onion and cilantro; add to the bowl along with salt and pepper. Gently toss without mashing the avocados.
  5. Toast pepitas in a dry skillet over medium heat until golden brown (3-5 minutes). Let cool slightly before adding to the salad.
